Where the starting values come from

How it works: capacity is bays x open hours x open days x 52/12. Booked hours are capacity x utilisation. Break-even utilisation is fixed monthly costs divided by capacity x (price after card fees). Payback is the money in before opening divided by monthly profit. It is a planning aid, not financial advice, and leaves out tax, food and drink sales, memberships and equipment replacement.
